  • 8 large Cage-Free Eggs (for Keto Style)
    4 Large Cage-Free Eggs + 4 servings of egg whites (for Low-Fat Style)
  • 1 cup Full-Fat Cottage Cheese (for Keto)
    1 cup Non-Fat Cottage Cheese (for Low Fat)
  • 1 cup Shredded Cheddar Cheese
    • Full Fat (for Keto)
    • Fat-Free (for Low Fat Style)
  • 1/4 tsp Iodized Salt
  • 1/4 tsp Pepper
  • Healthy oil (such as olive or avocado oil), for greasing


  • Blender
  • Spoon
  • 12-cup silicone or other nonstick muffin pan
  • Large boiling pot
  • High-rimmed baking pan

Egg Bites Recipe – Instructions:

  1. Preparation:
    • Preheat your oven to 325 degrees F (165 degrees C).
    • Coat the 12-cup silicone or nonstick muffin pan with a thin layer of healthy oil to prevent sticking.
  2. Blend the Egg Mixture:
    • In a blender, combine the eggs, cottage cheese (either full-fat for keto or non-fat for low-fat), half of the shredded cheddar cheese, iodized salt, and pepper.
    • Blend the ingredients at medium speed until smooth, approximately 30 seconds.
  3. Boil Water:
    • Meanwhile, bring a large pot of water to a rolling boil on the stovetop.
  4. Prepare the Muffin Pan:
    • Place the greased muffin pan inside a large, high-rimmed baking pan to create a water bath later.
    • Sprinkle the remaining shredded cheddar cheese and any other desired toppings (such as chopped bacon) evenly among the cups in the muffin pan.
  5. Fill the Muffin Cups:
    • Divide the blended egg mixture among the muffin cups, filling each cup about 3/4 full.
  6. Create a Water Bath:
    • Carefully pour the boiling water into the high-rimmed baking pan, surrounding the muffin pan. Ensure that the water level reaches halfway up the sides of the muffin cups. Take care to avoid pouring water directly onto the eggs.
  7. Bake the Egg Muffins:
    • Transfer the prepared pans to the preheated oven.
    • Bake the egg muffins until they are just firm, approximately 25 to 30 minutes.
  8. Cool and Serve:
    • Once baked, remove the pans from the oven and let the egg muffin bites cool for about 5 minutes.
    • After cooling, carefully remove the egg muffins from the pan using a spoon or silicone spatula.
    • Serve warm or store in the refrigerator for 3-4 days in an airtight container.
